Bread is the common element of all SUBWAY sandwiches.
There are five types of bread always offered, and several more only sometimes offered:

Baking bread is a multi-step process that most Sandwich Artists learn in steps.
Before bread can be baked, it must be proofed. Before it can be proofed, it must thaw and soften by being removed from the freezer.
An important nightly chore is to layout the correct number of pans, each with 5 sticks of dough in a silform, into the retarder inside the cooler - consult a superior to know how much bread to lay out. Laying out bread in the retarder ensures it is ready to begin the baking process as soon as the opening shift arrives.
