Knives are a critical piece of equipment at every SUBWAY restaurant. There are three types a Sandwich Artist must use:

Bread knives Edit

Bread knives have a pointed blade are used to initially cut pieces of bread to fill into a sandwich, and cut footlongs down into 6 inch sandwiches prior to the addition of meat and veggies. They are also useful for opening pouches of food to prepare.

Sandwich knives Edit

Sandwich knives have round-tipped blades, and are located further down the sandwich line. They are used to cut footlong sandwiches in half - after they have been filled, closed, and completed - and to hold down ingredients to facilitate closing them.

Scoring knife Edit

Scoring knives are used for the scoring of bread during the baking process.
