Lettuce (specifically, iceberg lettuce) is a vegetable made available at all SUBWAY restaurants. Lettuce and spinach are the first veggies to be placed on a sub.

Preparation Edit

Lettuce comes pre-washed in bags; preparation is as simple as dumping them into a 1/3 size ("large") food pan with a drain plate[2]. Extra deep 1/3 size food pans are available, useful for this quintessential sandwich ingredient.
