Like pickles, banana pepper, and jalapeño peppers, olives come in a pouch which must be drained and then poured into a 1/6 size ("small") food pan without a drain plate. You are advised to pre-chill the bag in the cooler before you open it, but it must be cooled after it is prepared.
Some franchises empty the bag of olives into two small food pans, filling each halfway.
