A salad or chopped salad equivalent for most sandwiches on the menu is made available at SUBWAY restaurants for a small surcharge over the price of the 6-inch sub.

Preparing a salad[1] Edit

  1. Wash your hands, dry thoroughly and put on gloves.
  2. Ready a salad bowl top and bottom, and a chopping bowl and chopper (mezzaluna or rotary chopper).
  3. Place a 6-inch portion of the equivalent sandwich's protein into the chopping bowl; ask what other veggies are required.
  4. Lettuce or spinach typically serve as the base of the salad. You can measure how much is needed by placing them in the salad bowl before putting them in the chopping bowl; note that spinach should be pressed down else the salad will be lacking in volume. Some restaurants do not add lettuce until immediately prior to tossing, for a prettier salad.
  5. Chop the contents of the chopping bowl thoroughly.
  6. Toss the salad with your gloved hands and make sure no large chunks of protein remain unbroken.
  7. Transfer to the salad bowl
  8. Top with cheese of customer's choice
  9. Place in a T-shirt bag along with a salad dressing of the customer's choice, some crackers, napkins, and a fork.
